CABERNET SAUVIGNON - Cabernet Sauvignon

The Carbernet Sauvignon variety is one of the most highly appreciated grapes in wine-making, of French origin, it likes cool dry ground and develops better on fertile soils. The bunch is tightly packed and the grape quite small. The must is high in sugar content which enables the production of wine with higher alcoholic content, good aromatics and rich in tannins. These qualities allow it to improve in the barrel and on wood, as a large part of its production is destined to vintage wines. In the elaboration of young wines it is usually accompanied by less tannic varieties such as Tempranillo and in the case of Somontano Moristel. In tasting the aromatics which stand out in young wines are strawberry, green pepper or ground pepper.
