- Chardonnay
Chardonnay is present throughout the winemaking world. It buds early
and is therefore sensitive to spring frosts It is however in cooler
areas such as the Borgogne and Champagne where it has reached its maximum
prestige as it has produced the most famous of French whites. It is
still possible to observe in the vineyards heaters whose task when switched
on is to protect the vines. In warmer areas such as Somontano, Catalonia,
Australia, Chile and California with a milder climate, the Chardonnay
grape matures well although it always demands more fertile, moist soil.
The Chardonnay is a small tightly bunched grape with an attractive straw
colour . the must is high in sugar content which allows wines with a
higher alcoholic content to be obtained. It has rich aromatic qualities
and extracts well
